One of several small structures serving the farmhouse kitchen. In the Appalachian region, people tended to have a preference for pork. Parts of the slaughtered pig were hung over a fire of hickory chips or corn cobs in the smoke house both to preserve the meat and to give it a distinctive, tangy flavour. Game such as rabbit and venison was also smoked.
